Usually extracting the juice from fruit and vegetables more slowly tends to have better results in terms of yield and flavor, not quality. So even at such high speeds, the enzymes are not destroyed, since the temperature inside the centrifuge never exceeds 45-50 degrees, the temperature at which they begin to beat.
